more pink things…

I just happen to have some leftover watermelon in my ‘fridge from lunch the other day, lots of mint growing in one of the pots on my deck, more limes than I could ever juice thanks to Costco and gee let me think…. yes of course I have vodka 😉
So, having seen this drinks recipe on a food website the other day…
For each martini, combine 1 ounce shot of watermelon juice, with one ounce Vodka, a slice of lime, and a couple of mint leaves.
Muddle the lime and leaves in a martini shaker. Add 1/4 cup ice cubes.
Cover martini shaker and shake vigorously to chill the drink.

… I’ll give you three guesses what I’ll be sipping a little later after I shower and rehydrate from todays handcycle trainer workout 😉
Oh and to get watermelon juice apparently I liquidize the flesh and then squeeze that through a strainer. Yeah well, it will at least get liquidized, the straining bit may just depend on my mood…. or possibly how thirsty I am 😉
With any luck we’ll have another of these watermelon pink sunsets just like last week’s to go with it.

About girlonahandcycle

Natural Brit/Naturalized American wife, mom, grandma and all around old broad still happily ignoring my MS (since 1985 - ha!). Every time it slows me down I find a way to speed back up which explains my very cool Tilite wheelchair and Top End handcycle ..........also my ripped arms ; ) Don't get back to the homeland or to other cool places quite as easily or often as I'd like anymore so theoretically my rambling here keeps me a little more connected to far away friends and family.
