OK it was time for another of my famous ‘clean out everything edible left in the fridge/pantry and roast it’ dinners tonight – I’ve been a big fan of roasting ever since I’ve been in the wheelchair because the oven is at just the right height for me to slide things in and out whereas I can’t see a thing on the top of the stove so stir frying or stirring risotto or polenta can be a hit or miss thing. The hope is that a standing frame may well enable me to stand up and cook again which would be awfully nice 😉
In the meantime though, roasted vegetables are amazingly yummy and since my beloved gets home tomorrow it was the perfect time to clean out the fridge and vegetable rack. Even better, one of my friends gave me this incredibly nifty tool that lets me pull out the oven tray and push it back in again without worrying about burning my hands and it’s much easier than trying to get an oven glove on and off

Now look how wonderful these almost old and wrinkly left over vegetables look once they’re cut up and tossed in oil and garlic
and they’ll be even better all roasted with some fresh herbs and feta cheese on top 😉
I guess the only downside is that now I should clean out the empty fridge drawers, sigh 😦
